Greek Yogurt Parfait

For conference weekend we traditionally have Pillsbury turnovers for breakfast.  Russell's never been crazy about it, and now I need to be careful not to spike my blood sugar. It was time for a new tradition! This parfait fit the bill nicely. The kids loved it, and it's healthy enough to have all the time.

I layered an ice cream scoop of plain unsweetened Greek yogurt, a little honey, All-Bran cereal, unsweetened shredded coconut, and berries. Then repeat and you're done!

The kids went on and on about how much they loved it! It looked fancy and tasted great. High fives all around.
