Strawberry Shortcake Cupcakes


So, I'm in charge of a Relief Society Activity tonight and need to make some cupcakes. The only nice thing about being in charge is you get to pick the theme. My theme? Flowers.


So not only do I get to make cupcakes, but I do it surrounded by beautiful flowers. Yeah, it's messy. But pretty and smells amazing.


Cupcakes
Whisk together in large liquid measuring cup:
1 cup milk
1/2 c applesauce
3/4 c sugar
1 tsp apple cider vinegar
1 tsp lemon extract
Juice 1 lemon (zest reserved)

Whisk together in medium bowl:
1 1/2 c flour
2 T cornstarch
3/4 t baking powder
1/2 t baking soda
1/2 t salt
Zest of 1 lemon

Combine wet and dry ingredients. Fill jumbo liners until half full. Bake in lined muffin tins 350 degrees for 15 - 20 minutes.


Whipped Cream Cheese Frosting
Whisk until stiff peaks form and set aside:
Half pint heavy whipping cream
1/4 c powdered sugar


Whisk until soft and fluffy:
6 oz cream cheese
1 cup powdered sugar
Juice and Zest from 2 lemons


Fold cream cheese mixture into the whipped cream.


Dice all the strawberries you want into a fine even dice.

Strawberries. I just piled them on. The great thing about using jumbo cupcake liners is there's room for a lot more of the good stuff.
