Did you know that you can make food yourself... at home?!? I've forgotten how recently. It often feels like more trouble than it's worth. I really do love cooking. It's the mess, the time, and the kids screaming part that makes it hard to do everyday. But the winds are changing and I'm starting to get back into it.
These Natchitoches Meat Pies from Our Best Bites are awesome but, full disclosure, kind of a pain to make. I compensate for the hassle by doubling it and freezing half. These bake up awesome straight from the freezer. Two meals done at once, hallelujah.
I stray from the original recipe a little bit by substituting pork sausage for pork, sliced chicken andouille sausage for half the ground beef, and only 1 1/2 tsp creole seasoning (for a normal batch). Then I accidentally forget the egg wash every. single. time.
I usually make little mini pie cookies with the pie crust scraps. 2 kid cup sized circles sandwiched with a Tbslp of jam for 15 minutes at 400. Homemade jam is great because the love used to make it miraculously makes it healthy despite any amount of sugar used.
The kids love it. Russell loves cleaning up the big mess it makes too. Really though, he's just so happy that I made dinner that he doesn't care that the kitchen looks like our newly demolished water damaged living room.
