no-knead bread - worth the wait

I've seen this recipe all over the place and heard that it was amazing - but the 12-18 hour raise time always made me laugh, think "yeah right" and close the page. It took my sister-in-law Heather bringing it to a family gathering to make me realize that it was worth it. Seriously - this bread is worth it. It's really realllllly good. And it's really actually very easy. You just have to think ahead a little. But you don't have to take my word for it...
