migas arriba!

this is my second recipe post in a row... I'm turning a corner guys. The pregnant lady love of food thing is really starting to hit with some serious force. We made this for breakfast this morning and it was AMAZING. You could totally have it for breakfast lunch and dinner. We didn't have everything called for in her recipe, so I changed it up a bit and it was great:

Migas

2 large flour tortillas
Canola oil/vegetable oil whatever
Red crushed pepper flakes
1 can of black beans
1 small can diced green chiles
salsa
5 eggs
milk
salt & pepper
cheddar cheese

Start the oil heating up in a large skillet over med high heat. I chopped up the tortillas into roughly 1 inch squares but you could do strips if you want. Test the oil by putting in one tortilla strip, it should bubble as soon as it hits. If it does throw the rest in. stir until they are nice and crispy and them remove them to a paper plate. Rinse can of black beans (give them a really good rinse, I use a colander) and dump into hot skillet. reduce heat to medium. Add can of diced chiles and about a half cup of salsa. stir until warmed thoroughly and then add the crisp tortilla strips. beat eggs in a separate bowl, add salt & pepper and about a 1/4 cup milk. pour mixture over the beans and tortillas. add some cheddar cheese. scramble with a spatula until cooked. add the rest of the cheese on top and serve. Seriously, this was so easy and sooo delicious. It would also be great with fresh tomatoes, onions, peppers, olives, whatever you have and sounds good. serve with more salsa, sriachi sauce, sour cream etc.
