okonomiyaki


My good friend Peggy Williams from work makes the most amazing and healthy food ever. This is her picture and her recipe. This is incredibly easy to make and it's healthy and delicious!

Okonomiyaki

(Tasty Japanese fried cabbage cakes)

2 -3 cups green cabbage leaves, shredded
1/2 cup mushrooms, chopped
1/4 cup yellow onion, finely sliced
2 cups whole wheat flour
2 eggs, beaten
1 cup water
Salt to taste
olive or grapeseed oil for frying

Mix the flour, cabbage, mushrooms, onions, egg and water together in a bowl. Could mix in some thinly sliced raw shrimp if desired. Heat a little oil in a frying pan and form about 4 Tablespoons of the mixture into a flat patty and cook until the underside is set, then flip over and cook the other side. Remove from pan and keep warm while cooking the remaining mixture. Traditionally okonomiyaki is served with katshou-bushi (dried smoked bonito), aonori (dried green seaweed), and with brown okonomiyaki sauce (found at Asian Markets) and Japanese mayonnaise.
Other serving suggestion: Serve hot over a bed of rice, greens or alongside steamed vegetables.

oh my! That looks so delicious. You and Mom made that one night for sunday dinner right? I am totally going to make that soon. And when Jeff gets home and we have our "recipes off Anna's blog" party we will have to have this one.
